越後三条打刃物
Echigo Sanjo Uchihamono
起源は室町時代にまで遡ります。その当時から地元の鍛冶職人たちが優れた武具や農具を作り出していたとされ、これが高品質な刃物製造の礎となりました。江戸時代には、三条藩の保護のもとで更に技術が磨かれました。高温に熱した金属を叩いて形状を整え、冷やして固める作業によって作られていて、これによって金属内部の隙間をつぶして強度を高め、摩耗に強い製品に仕上げてあります。くり返し鋼と炎に向き合ってミクロ単位の歪みを叩いて調整する必要があるため、職人の腕ひとつで出来栄えが大きく変わるのも特徴です。製造に必要な道具「ヤットコ（鉄ハシ）」なども鍛冶職人が自分たちで製造でき、製品からそれを作るための道具や用具まで一貫して作る技術が今でも引き継がれています。
Produced in Sanjo City, Niigata Prefecture, Echigo Sanjo Uchihamono are hand-hammered and forged blades that are extremely strong as well as resistant to abrasion because spaces in the inner part of the metal are hammered out. This craft dates back to the Edo period, when it was used to make farming tools such as sickles and hoes. Today, it is primarily used to make knives and scissors. Echigo Sanjo Uchihamono was designated as a traditional handicraft by the Minister of Economy, Trade, and Industry in 2009.
